Smokie unwrapped

I was cooking with this today and as I unwrapped it, still in the paper from the fish shop, I thought how good it looked - good enough to blip.   It also gave me a notion for taking more pictures of the fantastic Scottish food that is all around us and which at last we are valuing and promoting.

The Arbroath Smoke has had EU Protected Geographical Indicator status since 2004,  which helped it not only in promotion in and outside Scotland but also meant that nothing else could masquerade as the real thing.   Of course PGIs were lost as a result of Brexit and  the UK replacement has no international standing or reach.

You can read a little more about how the fish is prepared here.
