Bread & Butter pudding

We have been watching repeats of an old TV series that ran for 40 episodes from March 1994

“Pie in the Sky” follows the exploits of Henry Crabbe, owner of the Pie in the Sky restaurant, famous for its steak and kidney pie, and a well respected Detective Inspector in the local police force. 

In one episode he has to track down two criminals who are passing dud cheques and stealing credit cards. These two “Master” criminals are in fact two mature women. Henry follows their trail, encountering their famous Bread & Butter pudding along the way, which he tries, unsuccessfully, to replicate. 

When he finally catches them, he is far more interested in nailing the recipe than the criminals. He then learns the secrets of the dish. Vanilla sugar and genuine Dundee marmalade 

I tracked down a jar of Mackays Vintage Dundee Orange Marmalade and infused some sugar with a vanilla pod and have attempted to replicate it myself.
