Shokupan

Shokupan.

This is a Japanese sandwich bread. The process had some unusual steps and was quite fun to make. I've never made this before, and I didn't get as much oven bounce I expected. It is baked in a pullman pan and should have ended up with a flat top (it clearly needed a bit more time for its final rise). It might be cuter this way and is just destined to be toast, so it is fine as is.
