Lisa and Lola, behind their stall – Vegan Vacanza

After I’d prepared the stall and myself for the day ahead at about 9-30am Helena came bearing a gift of a small pot of food. It was a taster of the day’s special offering from Lisa who owns and runs the Vegan Vacanza stall in the outdoor area of the market just a few yards from our entrance.

I received the food gratefully as I’d wanted to try this special which I'd heard was on the menu. It was scrambled tofu with spinach, green salad, and croutons. I’ve loved eating tofu in virtually any form since discovering it whilst spending nearly a year in south-east Asia in 1982, particularly in Thailand. Lisa’s scrambled tofu was exquisite, so much so that I decided to buy a larger (but not the largest) portion a short while later when I had a break between customers.

I went to the stall to order and pay for it, and about ten minutes later, Lisa brought it to my stall with a beaming smile. She has only quite recently started this business and Helena and I want her to be very successful. We are so lucky to have such delicious and specialised fare on our doorstep. I’d go a long way for it. I've added an 'Extra' of the yummy food in its box.

I went back to thank Lisa and offered to take a picture for her, which she was delighted to have. She wanted her daughter Lola, who is very actively involved in running the stall to be in the picture as well. Lola is very keen that they use social media which she sets up for them. They can be found on Instagram as ‘Vegan_vacanza’. As they state – food to glow!
