Meal Prep Time!

Sunday is meal prep day and after Chez and I came back from shopping we started preparing everything.

First we fried some kale in coconut oil until it wilted, then toasted some pine nuts and flaked almonds and sliced up some apricots and added them to a bowl with cranberries and sweetcorn.

We Cut up a pomegranate and got out some tomatoes then cooked some quinoa, cous cous and bulgar wheat and some edamame beans (still on hob at this point) and grilled some bacon until really crispy.

All will be mixed together in a bowl and boom! Lunch prep done for the week.
