Late lunch

After a late breakfast (waffles, yoghurt and local honey) we had a late lunch. Very late.

I recently watched an old BBC program featuring the Scottish born TV Chef/presenter Tony Singh. He toured India in search of his Punjabi roots, cooking and sampling food as he went along.

He was treated to a fine, rich chicken dish by a Maharaja and I decided to make the dish. It was quite easy to find on the Internet.

A lot of spices including whole spices (picture) and included dried apricots which gave it a sweetness.
