Crispie Mountain

Was hoping for an outdoor shot today, but it's been grey and wet. So I was making some crispie cake for someone for tomorrow, and decided to make a bit of a display before boxing it up.

Mars Bar Crispie Cake

This makes a quantity for a tray approx 11 x 9 inches x 1 inch deep. A smaller tray would make the crispies thicker, a bigger tray would make them thinner!

Ingredients

400g Mars Bars
125g Butter or Soft Margarine (Stork)
125g Rice Crispies
300g Milk Chocolate or Scotbloc Milk Choc Covering (easier to melt and pour)
Sugar Strands or Hundreds & Thousands

What to do with them:

1. Use a double saucepan, or a small saucepan inside a bigger saucepan, with water in between. Bring the water to the boil and then turn down the heat to simmer
2. Slice the Mars Bars into small pieces.
3. Add these and the butter/margarine to the saucepan
4. Mix well until smooth (may take a while, but it doesn't need constant stirring)
5. When smooth (no melted margarine floating about or lumps of Mars Bar) remove from the heat
6. Add the Rice Crispies and mix carefully until coated evenly
7. Lightly grease the tray or line with baking paper.
8. Tip the mixture into the tray, and press down until flat
9. Quickly wash the pan, (make sure it's completely dry) and melt the chocolate for the topping in the double saucepan.
10. Pour the chocolate over the crispie mixture, and tip the tray to allow the chocolate to run into the corners and cover the crispie base.
11. Sprinkle with the sugar strands.

This is the basic recipe. But you can mix, match and add different or additional toppings. Here's a few suggestions:

? White chocolate, either melted and poured, or grated (in a cheese grater) and sprinkled
? Mini marshmallows
? Fudge pieces (cut into small squares)
? Maltesers
? Smarties
? Chocolate coated peanuts

Finally when it has cooled, cut it into as big or small a size pieces as you need....
