I was given a proper couche for baguettes for Christmas so of course I had to try it out. It's a piece of heavy linen in which you make folds to support the baguettes while they are proving (extra). The dough-making process was perhaps not as precise as it might have been, so I don't think they're the best baguettes I've ever made. However we have just had an official tasting and ended up eating all of one of them with the remains of the foie gras, so they can't be that bad.
