Baking

My baking skills are rather limited but I do enjoy making traybakes.
Here is on I made this morning. It is called Matilda cake.
The recipe is from a book called Treats for Teatime published by the Cumbrian Federation of Womens’s Institutes.

10 oz of Self raising flour
4 oz of sugar
6 oz of butter or margarine
2 desertspoons of Golden Syrup
2 oz of chopped glace cherries
4 oz Sultanas.

I also add a couple of tablespoons of milk.

Melt the margarine and syrup in a pan ; mix all the dry ingredients in a bowl with the milk:
Stir in the melted liquid; Mix well;  press into an 11 inch x 7 inch Swiss Roll tin. Bake for 25 minutes at 350F or 170 C.

Just right for those friends who come round for tea.
