Salmon Risotto

A bit of a quiet birthday for hubby today with his foot still very sore and now his back starting to hurt too :(
He’s being well looked after and the next series of Happy Valley has been started this afternoon.
We were supposed to be going out for a meal this evening but obviously he didn’t feel like it so I had to rustle up something instead. Salmon risotto was the best I could do at short notice which he thoroughly enjoyed. We will go out for his birthday meal once he’s better.
