Steak

Strip steak, chard, and roasted beets. Wine: Martin & Crowshaw MC4 2013.

Steak and a favorite wine. Not at all bad for a Monday night. I cooked the chard with shallots, reduced some demiglace with them after they were wilted, and finished them with sherry vinegar... adding this one to my list of nice chard treatments.
