Smothered Pork Chops

Smothered pork chops, Christmas Lima beans, and broccoli. Wine: Azul y Garanza Navarra Granacha 2020.

I made a shallot and bacon dripping gravy for the pork chops. I don't have plain thyme on hand, so I used herbes de Provence which worked very nicely. The wine is rather nice, a touch rustic, and had nice acidity to stand up to the gravy.
