Mahi Mahi Luau

Mahi Mahi with rice and stewed chard. Wine: Echolands Rivière Galets Vineyard Grenache 2019.

This is adapted from a Hawaiian dish that traditionally uses taro leaves. Taro (particularly the leaves) not being particularly available here, I used a recipe that substitutes chard. This also has the advantage that chard doesn't need to stew as long as taro does (much more weeknight friendly). Ah, to cook again!
