Pork Chops

Pork chops, beets, and shishito peppers. Wine: Domaine Milan Le Vallon 2014.

Dinner was excellent. I took the pork chop seasoning in a different direction than usual (celery salt, garlic, coriander, dill, ground bay, and pepper), and I made a really nice pan sauce with vermouth, caramelized onion vinegar, and dijon mustard. The wine is a Languedoc Grenache blend and paired beautifully.
