Coeur de Neige

Possibly my very favourite rose.  Starts off as pristine white, and slowly, slowly develops the palest pink centre.

AND - it also has a scent.  What's not to love.  

Well, there is a bit of a downside - it doesn't like getting rain on it's petals, and can look quite scrubby quite quickly, especially if it's windy.
