Christmas means Meatball Soup Time

I think I've mentioned Marlane's great meatball soup in the past but don't think I've ever blipped it. This is in preparation.
Back row is the pressure cooker with the large colander on top catching the last few drops of the stock of four chicken carcasses.
To the right  is the stock already drained from the pot and to the right of that, in the blue bags, there are two more carcasses ready to go into the pressure cooker. Not enough room for six when they are frozen.
At the front is the meatball mixture. 1.5lb of minced chicken, fresh garlic, onion, fresh ginger, 1.5lb sausage meat (just over as they come pre-packed), and an egg goes into that to bind the meatballs.
Very thin, crushed up, rice noodles are added to the soup when it is cooking on the day.
It's a lot of work but the soup does us for a few days and everyone loves it.

The meatballs are now in the freezer, 45 of them so far but there's a couple more pounds of minced chicken, in the freezer, to double that amount.
