Pork Tenderloin

Pork tenderloin, puréed parsnips with madeira and walnuts, and salad. Wine: Domaine Olivier Mon P'tit Pithon Côtes Catalanes 2019.

This was a great dinner, but the parsnips from a James Beard recipe really stole the show.
