Chicken Salad

Chicken and avocado salad with labne and ramp vinegar, snow peas, and sweet potato fries.

I'm usually not a big fan of chicken salads, but this one came out very well. This was one of those dinners where I figured out what I was making as I made it. I didn't have anything planned and had no meat thawed, so I started by sous vide "poaching" some chicken, saw labne in the fridge and decided that could be a good mayonnaise substitute in a chicken salad, the avocado I was going to have on its own became part of the salad, and I came up with flavorings at the end (pepper, celery salt, and ramp vinegar).
