Chicken Wings

Pork rind crusted chicken wings, and salad with curry vinaigrette. Wine: Château Los Boldos Cabernet Sauvignon.

I love air fried chicken wings, but my favorite recipe involves a dredge in seasoned flour which is no longer an option when cooking for my husband (gluten sensitivity). I substituted pork rind crumbs (which is already my go-to substitute for panko), and the already great recipe is massively improved. In other alterations, I added a bit of curry powder to a basic vinaigrette which was also delicious. The wine is the second half of a bottle we started last night and is quite good - though it would make for an odd pairing (and a greasy wine glass), so we saved it for after.
