Simnel Cake out of the Oven

It is that time of year when I make Simnel Cakes. This is the first one out of the oven after having cooled. I have learnt in previous years not to take the cake out of the tin before cooling down, else the marzipan layer is still soft resulting in the top and bottom layers sliding apart.
