Gypsy Tart

I can’t remember ever having made one before, but we’re invited to Carmen’s house for dinner tomorrow and she requested I bring one. We talk about anything and everything on our dog walks, and yesterday the subject was school dinners, or rather pudding, and this was my favourite!
For those who didn’t have the good fortune to go to school in Kent, you may not be familiar with gypsy tart, but it has only two ingredients, and shouldn’t work but it does. 
It’s moussy but set, caramelly but not, and probably the most unhealthy pud in the world. When it comes out of the oven it’s a bit wobbly, but has to sit in the fridge overnight to firm up. I wonder if they will like it.
Sunny and warm today, 19 degrees this afternoon in the shade!
