Bison

Bison, eggplant escabeche, quinoa, and arugula salad. Wine: B Cellars Blend 26 Oakville Cabernet Sauvignon 2012.

I had a rather diminutive portion of bison tonight as the steak we split had quite a bit of fat and gristle (unusual) to be trimmed away. There are very limited contexts in which I enjoy eggplant, but this one, discovered when we were in Buenos Aires, is my favorite.
