Spinach . . .

. . . is amazing stuff. Tonight I cooked a base of shallots, garlic, stock etc. added cannellini beans and then finally masses of spinach. Within a few seconds the spinach had reduced to this - magic.

Before serving I added some sliced lamb steaks which I had cooked for a few minutes previously and had left resting. This is the way we are going - a bit of top quality local meat cooked perfectly and added to everything else.
