Salmon Croquette

This was all quite good. My salmon croquette recipe is slowly morphing and improving. I have always used almond meal instead of breadcrumbs as a binder inside the croquette, but I have now changed this to a mix of almond meal and potato flakes. I used to use panko for the coating, but since we discovered my husband's gluten sensitivity, I've swapped this out for ground pork rinds (another improvement).
