Crubeens

Crubeens are an old southern Irish dish of boiled pigs' front trotters. Never had them myself, more something that my parents' generation and further back, would have eaten. But you can still see them on sale in Cork and Limerick food markets.

I picked up a bag of duck necks. Never had them either- I'll figure something out, but I'm thinking they'll be good with some Chinese 5 spice :)
