Elderflower cordial - 2012 vintage

I have revisited a bottle of elderflower cordial that has been sat in our fridge since June 2012. It still has the same fungus-y mass sitting in the middle of the sweet liquid. It is perfectly palatable, but I always found it a little off-putting, which is why it is still sat in the fridge. I had a glass this evening. Still tasty, not fermented. I am amazed. Maybe I won't be so amazed if I wake up with stomach pains in the middle of the night.
