A FEW SUMMER GARDEN EQUATIONS

Tomatillo+peppers=Tomatillo Salsa

Tomato=+peppers+onion=Salsa Verde

Eggplant+peppers+onion+zucchini+garlic=Ratatouille

Lettuce+green beans+tomatoes++canellini beans=Salade Nicoise

Cherry tomatoes+basil+marjoram=Pasta Sauce

Tomatoes+onion+garlic=Marinara Sauce

Cucumber+scallions+dill=Cucumber Salad

Throw everything together in a bowl=Garden Salad

Throw everything together in a pot=Minestrone

Throw everything together in a wok=Stir Fry

CONDIMENTS Which will never come from our garden
Capers, hard boiled eggs, poached eggs, tuna, anchovies, sour cream or yogurt, oil, vinegar, soy sauce

When I was a young bride I marveled that somehow we managed to sustain ourselves without our mothers cooking for us. Now I marvel at the fact that not only can we grow all this bounty in our garden, but we can keep it alive long enough to make all kinds of dishes to sustain ourselves. By the time you amend the soil, buy supports for the tomatoes and the beans, buy gopher wire, fix the irrigation, chase around after the mole that somehow got into the mole-proof box and spray for bugs it only costs about five times more than going to the market and buying it, but there is something very satisfying about picking produce from your own garden....
