Perfect Pork Chop

This month's Bon Appetit magazine had what looked like a great recipe for "Sambal Chicken Skewers" except we didn't have any chicken, so we gave it a whirl with pork chops.

Usually after trying a recipe for the first time, we brainstorm as to how we can make it "better next time". More garlic, more salt, more heat..... Not this time. It was perfect from the get go, even though we used a different protein.
