Small Copper, Waiting for the Sun

The tiny Small Copper butterfly only flies in bright sunshine. This one is waiting with its wings half open for the sun to warm its muscles enough for it to fly. I chose this photo as it gives perspective to its tiny size.

Wednesday Recipe: (Eat well for £20 a week)
I'm still enjoying the eat well for £20 a week challenge - It is proving easier than I imagined. The concept is not a weight-loss diet, but simply to make an effort to eat really lovely food on a tight budget. However by eating well there has been an added bonus of some weight loss.

Lemon Posset

Very simple, very cheap and absolutely delicious.

300ml / ½ pint double cream
75g / 2 ½ oz caster sugar
Zest and juice of 1 large lemon

Place the double cream and the sugar into a large pan over a low heat and bring to the boil slowly.
Boil for three minutes, then remove from the heat and allow to cool.
Add the lemon juice and zest and stir well.
Pour into wine glasses (2 large or 4 smaller portions)
Leave to set in the fridge for a couple of hours

Serve with homemade (or bought ) shortbread.

Cost:
Cream: 50p (I buy cream when at a reduced price in the supermarket and freeze it.)
Lemon 20 p
Sugar: about 10 p
Total 80 p for four portions.
