We don't grow aubergines because we've never been too keen on them, but we may be changing our minds. We were given a few today by a friend, as we always are over the summer, and it so happened that her mother was busy cooking some for their lunch while we were waiting in the kitchen. She explained what she was doing; salting, drying, coating in flour and frying in olive oil, and so I followed her instructions for our dinner later... and we thought they were lovely, light and fluffy!
