Flatweed or catsear

Growing around the garden although I caught a couple in the strimmer this afternoon, annoying.  When checking the name and detail the informations states every part of the plant can be eaten, as in a salad and the roots can be roasted to make coffee, our experience of this using acorns was challenging.  Also the plant is used in herbal medicine for its diuretic and anti-inflammatory properties.
