Happy Kids

Julian and Libby and their fab kids came round this afternoon to play, they brought cookies and we spent the whole afternoon and half the evening outside enjoying the light :) The kids played happily, like, the WHOLE TIME, inside and outside, playing with the rescue station indoors and the pirate ship / submarine / thing / climbing frame outdoors. We made pizzas and had supper together, chatted about all sorts of stuff, got stained fingers from picking blackberries.

And when they went home we put the boys to bed (a very tired, over excited, crazy Bear and a very tired, coming down with some virus Bean) and made cheesecake.

I am LOVING cheesecake.

My current recipe:
8 digestive biscuits plus 50g melted butter, blitzed and pressed into the base of a cake tin, left to chill in the fridge while you make the filling.
300g tub full fat cream cheese
3 eggs
175g caster sugar
about 140ml full fat plain yoghurt
4 tbsp blackberry puree
Beat everything except the blackberry puree until light and fluffy, and pour into the tin. Swirl the puree over the top.
Bake at about 160C for about 50 minutes or until set, and the middle is a bit less than wobbly! Leave to cool in the tin before carving up and serving with fresh blackberries and whipped cream :)
