Daft
I've done some daft things in my time and this is one of them. I took my marmalade outside onto the garden wall to try and get the sun shining through. Didn't quite work in terms of photography, but gosh it tastes good. And I am super pleased with myself.
Our little lime tree has turned up trumps and I only had to add one orange to make up the weight. Don't know about anyone else, but I only ever use half the sugar - and it's plenty sweet enough and has set very well.
If it was a soft fruit jam I'd keep in in the fridge but its not necessary with marmalade - at least that's what I've found.
