Chorleywood method

Something like 96% of UK bread is made industrially by what is known as the Chorleywood method. I don’t know what proportion of French bread is but I would guess it is very small as each village seems to have its own Boulongerie.

Every year when we get back to England I am reminded how awful the easily available bread here is. I am hoping to start making more of our own - it will be worth the effort.
