Tis the season for samphire

Otherwise known as sea asparagus, marsh/rock samphire, or glasswort. Little coral-like fingers packed with minerals like iodine, calcium, zinc, and silica, not to mention a range of vitamins.

Make the most of it if you spot it as it has a short season (Jun -Sept). I blanched these briefly, mainly because it is naturally salty, and then combined it with fresh peas, red onions, and some tomatoes with lemon dressing. This would be nice with some grains, too (quinoa, buckwheat, or brown rice).

Apparently you can grow it yourself. Intriguing.
