Sopapilla

An uneventful day catching up with things and helping a friend work on a jigsaw puzzle she was frustrated with - until we got a last minute surprise call from a couple of friends from our church who are planning their wedding, who invited us to go out to eat with them at a Vegan Mexican restaurant called “Belenty’s Love”. Needless to say, we had never eaten there before as we generally are not big fans of Mexican food in American and are not Vegans, but it was worth it to catch up with our friends and be asked to stand in as “parents of the groom”.
This photo is of the delicious, sticky, sweet, crispy fried sopapilla with fresh berries which was generously offered to all the guests to celebrate the 5th anniversary of the restaurant.
