Ribbons

Lots of courgettes at the moment so this is a great way to cook them simply cut into ribbons with a veg peeler.

Fry with red onions, garlic, a little butter and juice of half a lemon. A dash of pasta water then add cooked tagliatelle and top with grated Parmesan. Fast, fresh and very tasty.
