Bon Bonito

Bonito is the aged fish used in pretty much all Japanese food (much to my veggie dismay) to add umami flavour. This is the savoury flavour, and comes from glutamate (hence the asian flavour enhancer monosodium glutamate). These fish were hanging on rusty hooks outside a sake shop in Ueno, where my and Pickle went for a tasty Indian lunch.
