Breakfast
Breakfast is the best meal of the day! If I had to skip a meal, it would be supper!
This morning I made almond pancakes with blueberry compote and Greek yoghurt! It’s one of my favourites and keeps me going for hours.
In case you would like to try it, this is how I do it:
Pancakes: 3 slightly rounded tbs ground almonds, 1 tbs plain Greek yoghurt, 1 slightly beaten egg. Mix well together.
I have a flat crêpe pan. Heat the pan well and add a very small amount of oil. I use coconut oil. Drop the batter into three parts and allow the pancakes to cook on both sides. Put onto a warmed plate. Add 1 tbs of blueberry compote and a couple of spoons of Greek yoghurt! Enjoy!
I shall be busy and away from home for the next couple of days. My son is over from Canada and we’ll be doing things together.
The lovely cat sitter came over yesterday to collect the keys. She will be coming in to feed and play with Honey in my absence!
Now I have to pack my small overnight case to leave tomorrow for one night and two days!
