Banana pancakes

Dutch television started a series about getting people healthier and fitter last night.
I'll try to follow and join in, it's a ten week series and they have sensible recipes and daily trainings. This was my choice for today's breakfast, they were delicious and it is so easy ! Flour/gluten free , so great for dieters in general and people following a gluten-free diet alike

Mash one banana, mix with two whisked eggs and a pinch of cinnamon. Fry on medium fire in non-stick frying pan in a couple of drops of olive oil. You do have to fry them slowly and one scoop per pancake at a time, so these are small pancakes. Because there's no flour in them the texture is more omelette-like than regular pancakes, they have to be fried 'dry' before you can turn them without breaking them. Serve as is or with some other fruits (that gives a bit of sweet sour balance as these pancakes are rather sweet because of the banana) . Enjoy ! :-)
