refrigerator pickles

Finally I have some home-grown, home made pickles that I am proud of.

My first several attempts at making true fermented pickles were failures - they ended up in the garbage rather than risk my health eating them. This week I decided to try an easier approach. I placed the just picked cucumbers (see September 2) into a couple mason jars, made a simple brine, and added garlic, parsley & pepper flakes. After two days in the fridge: edible pickles! I know they can't be stored long using this method, but that's no problem because I've eating them so fast.
