The Milkmaid

With the wind from right behind, the mainsail is on one side and the jib is on the other side of the ship. In dutch this is called sailing with a Melkmeisje, or in english with a Milkmaid.

What you see here is more like a double milkmaid, because next to the jib is also the yankee. This generates an even better airstream for more forward speed. Important in the races, of course.
