Meringue for Mahjong

We meet up for mahjong every week and bring along some food for lunch.....it's all very civilised and there's wine involved so even more civilised.
I used Angela Nilsen's lemon meringue pie recipe, golden caster sugar gives the meringue a creamy colour rather than white.

Transportation without it breaking could be a challenge.
