At Work in the Baking Cottage

Had a great afternoon and evening baking Swedish "tunnbröd", literally "thin bread, in a baking cottage using a wood fired oven. Many thanks to Olle and Kärstin who organised the whole event and provided the dough and other bits and pieces..
We rolled out the dough until it was very thin, then used a special rolling pin to impress a pattern onto the thin round of dough and break up the sheets of gluten. After that it was into the oven where the bread is moved around a little and turned over to ensure an even bake. This is what I'm doing in the photo. Then it's out of the oven, onto a wooden table where the singed flour is brushed off and the round of bread is folded and left to cool.
After making bread we left the oven to warm up even more and moved onto Pizza! 20 people enjoyed an afternoon full of warmth and fun!
Thanks also to Tomas Eriksson and Sara Dahlberg Eriksson of Villa Fridhem. The baking cottage is part of their excellent Bed & Breakfast and conference centre.
