Coconut chocolate mousse

I eventually decided to used the young coconut for two things: yoghurt, and this raw cacao mousse.

The pudding is so simple to make; just the coconut, cacao powder, coconut nectar and a pinch of salt. Whizz in a blender & chill. You could combine it with any sort of fruit base you like. I had some oranges in, so that's what was in the bottom of this dessert.
