Usually by Friday I'm running short on ideas for feeding myself. However it's been a difficult couple of weeks and I wanted to cook.
Not least because I'm always encouraged by improvising an edible meal from what I can find in my store cupboard with whatever's left in my fridge.
So here's my mushroom, ham, pea and spring onion rice thing..

Had I known I was going to take a picture beforehand I might have made more of an effort with the presentation or garnish.
