An omlette with aspirations of rising higher, such as to souffle level...!

Following a friend's culinary advice, I beat the yolks and whites separately then combined them in the pan.

For all I know this may be the norm, but not in this house - a very interesting texture. Met with approval from the chief tester herself. (She once said she wanted to become a dinner lady when she grew up, so that she could learn to make "orlettes", as she called them).
