Why I thought this was a good idea tonight is beyond me!

Some of the fresh tomatoes from Andy's greenhouse were roasted with olive oil, balsamic vinegar and some mixed herbs and went great with pasta for our dinner tonight.

And the courgettes, well, they now form part of 8 portions of a new potato and cider casserole, all of which are currently cooling ready to be frozen.

That's a whole lotta cooking for one night, a Monday night too, the sleepiest night of the week. I definitely need to be in bed now!
