Baking day

The weather was so foul that I had a baking day, and here I am making stollen.

Not easy to knead dough and take a photograph at the same time. I used a Paul Hollywood recipe, with a few variations of my own (stem ginger, chopped apricots) It took for ever to rise, but finally, late evening it was done. In fact it made two loaves, and one went into the freezer.

I think it tastes OK, but I might have to have another slice, just to make sure.
