Veganuary

On a whim I decided to sign up for Veganuary. Today's meal is mushroom risotto without parmesan, one of the few things I can cook. Although I got no further than chopping the onion before I was ushered out of the kitchen and told to stick to what I can do, which is reading the Guardian online and and messaging people. The risotto misses the parmesan but extra truffle oil and madeira goes some way to making up for it.
